Lime Curd Tart
6 egg yolks, beaten
1½ cup Sonoma Syrup Co. Lime Infused Simple Syrup
½ cup unsalted butter, cut into small pieces
Zest from one lime
Put egg yolks and Lime Infused Simple Syrup into a medium sized saucepan. Cook over low heat, add butter in small pieces stirring constantly for 12 minutes, until mixture thickens.
Remove from heat and cool.
Pour the cooled lime curd into your favorite baked tart shell(s) and chill until set.
Garnish with your choice of lime wedges, berries, chopped pistachios, meringue or mint.
