I adore the lavender fields in the valley and how the herbaceousness of gin pairs beautifully with the herbal fragrance of lavender. It’s something I learned early as I started to play with this favorite botanical! It’s fun to add a sweet citrusy Meyer lemon splash to create this refreshing summer cocktail.
Ingredients

4 oz. gin (½ cup)

2 oz. Meyer lemon juice (¼ cup)

1 oz Sonoma Syrup Co. Lavender Infused Simple Syrup (1/8 cup)

Ice
-
Brut champagne or dry sparkling wine

Lavender sprigs
Directions
In a cocktail shaker mix gin, Meyer lemon juice, and simple syrup. Add ice to fill.
Shake vigorously. Pour mixture into two glasses.
Top with Champagne or dry sparkling wine. Garnish with a sprig of lavender.
Recipe Note
For a lighter tart cocktail, substitute sparkling water for the Champagne or sparkling wine.
To batch this recipe for parties and gatherings, multiply this recipe by 3 times. In a small pitcher, stir together the gin, lemon juice and Lavender Infused Simple Syrup. Store in the refrigerator. To serve, stir and divide into glasses. Top with sparkling wine and enjoy.
